(More customer reviews)I found an expensive little bag of Bob's Red Mill brown teff at a health food store and tried it as cooked cereal. I loved it!! It reminded me of choco-o-meal or malt-o-meal that I had as a kid. So the hunt was on to find more. My next batch was from teffco.com, and I ordered both brown and white to compare. The taste is indistinguishable, but I like having both on hand. I cook either or both (mixed) to keep in the fridge for cereal, or to add to stir-fries, casseroles, or muffins. I grind the white (or you can buy the flour) to hide in bread for some added nutrients and protein. I'm going to try to add it to some soup this week.
The smallest grain in the world, teff comes from Ethiopia; its name means "lost" because it can easily disappear into corners. Benefiting from its size, all the nutritive hull qualities are multiplied, and it doesn't take as long to cook--the same reason lentils make for such a great legume.
Unfortunately, shipping is the killer on these specialty items. But when I found BarryFarm.com via Amazon, I decided to try out some other new things to make the shipping fees count. Barry Farm has gotten some regrettable reviews due to shipping delays and slow communication, but I found out that they are sometimes waiting on a product to come in before they ship the lot. I can wait as long as I know there's a good reason :) My previous order took about 3 weeks over the holidays, but every item was high quality, well-packaged, and worth the wait! Oh, and there's more product and cooking information on their website as well; they just try to keep the packaging simple and cost-effective.
